A method of preserving moat has V'Cii brought out iu France by H. Bo Lappareut which seems to have met with considerable success. It cm ho applied ou a small scale for household purposes. The principle consists in exposing the meat to sulphurous acid fumes. By burning a small amount of sulphur iu a receptacle containing the meat hung up iu place, it can he preserved for several da-vs, even in siuniiiGX*. T.iero is no'taste left from the sulphur fumes, and thci’o seems to .he no danger to health. Such a method can be used also ou a large scale for preserviug meat for the army use, as it is quite simple and easy to apply in practice. From experiments made ou a largo scale it appears that the meat fumigated with sulphur did not contain more than 23 grammes (1140 grains) of sulphurous acid gas per 100 kilogrammes (230 pounds) of moat, which is iu the order of ten thousandths. The meat should he fumigated as soon as possible after killiuf?, anti prefeiubij i on parts, which iiave not out bones. Lean meat is found to keep best. To preserve it for several months, meat can ho enclosed in vessels full of carbonic acid gas. It the appearance of fresh meat, and its taste is not changed after cooking. In England, Mr Lascelles Scott proposed a method which consists of immersing the meat iu a solution of bisulphite of lime. Mr T. R. Davis Truro, S. A. writes “-Some mouths ago I had a very severe attack of -diarrhoea. Knowing that Chamberlain’s Colic, Cholera, and Diarrhoea Remedy had effected a euro iu many similar cases I decided to see what it would do for mo, and am pleased to say it checked the attack.
