Wellingtox, August Tlyri Dcpartmoiit o£ 'Agriculture has, decided to take tests as to tho practical value of the principle of pasteurisati-An. as applied to butter making. Certain. boxes of pasteurised butter will he held in cool store in the colony, and'treated under much the sanio conditions as butter to be distributed on the British markets. Along with tho pasteurised butter there will bo stored butter made under ordinary conditions. ' Thus at the end of the, time corresponding with that Which- jtwcmld take for butter to get into''the hands of the British consumer a fair idea may ba obtained as to how-, butter from pasteurised milk will compare with buttec from unpasteurized milk. . ." *■
