Bacon Curing Establishment

In the course of a very short space of time Pukekohe will possess at least another industry —that of bacon curing, which, no doubt, will be welcomed by the farming community. The dead pigs despatched from the local railway station to Auckland tor curing purposes, in a year, amount to a considerable number, and this means that a j large amount of money goes I out of the district. For some i time past a number of local | people have been suggesting | the flotation of a bacon company I here, but apparently there are no influential business men game to risk the outlay of a considerable amount of money. It is always wiser to commence at the bottom of the ladder to ascend.and this Messrs.Roulston Bros., butchers, have decided to do. At the rear of their butchery business, in King Street, they are having erected, by Messrs. E. Crum & Son, a large bacon curing room, in brick, underground. The room is cooler underground, for such an industry. The latest fittings will be installed, and the room will be sufficiently large to accommodate about 100 pigs at one time. In conversation with Mr. L. Brown, yesterday, a TIMES reporter was informed that the firm would be in a position to cure for the district. They have been curing bacon on a small scale, but when the new buikK ing is completed they will be able to go into the work on a much larger scale. The room will be supplied with electric power and electric lighting. Although, perhaps on a small scale at present, Messrs. Roufston Bros, should be able to cater for the demands of the district, and if sufficient inducement otters, they may be obliged to enlarge the premises. At any rate.they are to be congratulated on their enterprise. '
