DRIED POTATOES.
(To the Editor.) Sir,-I seo from the "Times" th.it tho Executive of the Franklin sub provincial district of the Farmers' Union have been discussing drying po f itoes for stock food. I would lik" to ask, Why not for human us. '. For a numlier of years I have I e<-n advocating the drying of potatoes for human use; but no one .-e :ned to warm to the idea suffi cir-ntly to do so As usual, the pigheided ilriti-her preferred to let the gud.-ful German ";icoop tho pool.'' Mar.v years ago dried potatoos were a cheerring item of my larder. For pionee-s, gum-diggers, hushmen, or the like, th. y would be a God-send The modus operandi, as far as I re member, was to peel and steam the \ potatoes, mash them, and then break i up into irregular pieces—not larger than say a French bean-and dry, disturbing continually. Then they would keep in tins indefinitely. To re make for use, put say one tablesp.ionful on a plate, pour on a good Mij.ply of boiling water, and t/i< u in vest another plate on tho lot, and in two minu"\s you had a lino pla'e of "I -I."'I ptlt.ltoes Thut is, U, m.oi, m the hilly b>ihd tin potatoes wo;c ■ . k-d n-aly f„r i:-. ■•''inly, Aff.»r..p.,liNui Puk l< li < Hid riv; to the „ (jl-l'lll, in ! •he i up t l !" piniioi r> I Y > r-> etc .
