ROLLED HERRINGS.

Tho following is a new way of serving herrings, and the recipe should bo jotted down in the cook-book : Take four fresh herrings, two tablespoonfuls of breadcrumbs, the grated rind o( half a lemon, one teaspoonful of milk, two ounces of butter, and one teaspoonful of chopped parsley. Make a stiff mixture with tjie breadcrumbs, parsley, lemon rind and milk, and add a seasoning of salt and pepper; then fillet tho herrings, and on each fillet spread n layer of the mixture and roll up and lie in shapcv Place the fillets on a greased tin, put a small lump of butter on eaHi roll, cover with greased paper, and bake for ten minutes. Servo very hot. Cooked and served in this wf.v, herrings are a recheicho little dish.
