AN UNCOMMON SWEET.
SOUFFLE WITH TOAST. Ingredients.—4 small pieces of toast, 1 cupful milk, a few almonds, 4 eggs, 2 tablespoonsful sugar, a little grated lemon peel, about 6 tablespoonsful thick stewed fruit juice. Smear a large enamel plate with butter and place on it the four pieces of toast. Boil the milk with the almonds then strain it. Beat up the egg volks very thoroughly with one tablespoonful of sugar and the grated lemon peel; then mix in the milk.
Pour this mixture slowly on to the toast, cover the plate and set it on a pan of boiling water. Leave it for about half-an-hour, till set., keeping the, water underneath constantly boiling.
Beat, up the egg whites, with a tablespoonful of sugar and the fruit juice, for at least a quarter of an hour, making them very stiff. Spread this mixture over the ingredients on the plate, and bake for about 15 minutes. Serve cold with stewed fruit.
