PAYING FOR UALITY.
ON THE BEEF MARKET. A remarkable commentary on the premium which butchers are willing to pay for thq class of animals that meet requirements in the higher departments of the beef trade (says the British Live Stock Journal) is provided in the fact that at such a centre as Ayr, Aberdeen-Angus type of bullocks reached the great price of 82s 6d per cwt, while at the same time the quotations for Shorthorn type of cattle, according to the official figures, secondary sorts brought from 35s to 4Gs per cwt. A study of these figures should suggest things to farmers. Here we have one class of cattle bringing £2 7s 6d per live cwt more than another class which is put on the market for ostensibly the same purpose. StfiJl more concretely it means that one of these secondary lots of, say, 9cwt live weight, brought £ls 15s, while an Aberdeen-Angus of the same, weight brought £37 2s 6d, or £2l 7s 6d per head. There is no excuse for ignorance las to the type required when butchers in the ordinary commercial markets give such a practical indication of what will best pay the feeder.
