A PLEASANT SWEET.
“ Snowballs. “ Cook a cupful of rice, half a cupful of sugar, u tcaspoonful of salt, and xrom one to two teaspoonsful of cinnamon in a quart of milk, until the mixture is very thick and stiff. After five minutes fast boiling, it may be cooked slowly in a double saucepan. Leave to cool. Have ready some small baked apples—(steamed figs, or tinned peaches may be used if preferred)— lorm the rice mixture into eivht or twelve ‘ cups” an inch and a-half in diameter, insert the fruit, form the cujxs into ball shapes and roll in fine granulated sugar until no more Will adhere to them. Pile these “snowballs” in the centre of a green -jelly nest (made the day before) and serve with a sauce made of greengage jam. Jelly Nest.
Dissolve a packet of plain jelly in a pint of hot milk flavoured with vanilla, almond, or essence of lemon. Colour with a little green vegetable colouring. Pour into a large bowl and beat till well fluffed up. Put into a ring-mould and when readv to serve (next day) turn out on a round dish and pile the snowballs in the nest. Garnish with Angelica.
