A Canterbury journal says the proper mod e': to observe with ■ regard to successfully carrying out the scheme of sending to Europe carcases of beef and mutton, butter and cheese are, rn—lst. A deep .commodious ship harbour, connected with railways throughout the ■ province-.of Canterbury; 2nd ly, The slaughter-house to be situated adjacent to the shipping place; 3rdly, Commodious cattle and sheep paddocksxonvenient slaughterhouse. The cattle to be kept in paddocks some little time before killing f 4thly. After being killed the carcases hot to be removed:till perfectly coot; they should,then at once be sent on board Ship and placed in the freezing room without delay, as also the butter and cheese. ; if- -.i
