TO KEEP BUTTER GOOD. For the best effect for long keeping, butter should not, when it has come, be gathered into a solid mass nor into large lumps, because in this shape it requires working to get the buttermilk out. It is better to gather it in granules not larger than grains of wheat, or at most not larger than peas. When thus gathered the buttermilk can be washed out without any working and with the least possible handling.
