PRESERVING BACON, Etc.
Mr. J. P, Geary, of 52, Tudor road, South Hackney, patents three preparations, either of ■which he claims as suitable for effecting the purpose. The simplest consists of— : Salicylic acid, 12 drachms ; benzoic acid, 3 drs; nitric potash, Jib ; corrosive sublimate, 44 grains ; water, 8 quarts. Into this solution he soaks the green hams for the period of two hours, subsequently hanging them up to dry for several hours. When the drying process is completed, he places on the parts most likely to become slimy some powdered charcoal, or bran and borax well mixed together and in a dry state, in the proportion of -J lb of borax to Joz of charcoal or half pint of bran. This latter treatment however, is only necessaxy when the hams are shipped for long distances, such as from America to England, and is not necessary for short journeys. The inventor claims by this process to effectually prevent the. appearance of slime common to the usual methods, and to obviate thereby the necessity of washing. The solution is stated to be in nowise detrimental to health.
