CONDENSED MILK.
A company for condensing milk is bcin.cc formed at Kiama, New South Wales. A prospectus has been issued, and the proposed capital is £6OOO. It is pointed out that tins of Swiss, Anglo-Swiss, and Irish milk have been sold in Sydney, or in a country which should be exporting instead of importing such a useful commodity. It is stated in the prospectus that an Irish condensing company preserved milk profitably until the price of raw milk rose to 7id per gallon, more than double the price at which milk can be purchased at Kiami. The company will manufacture on the Swiss principle. The process is a simple one, and consists chiefly in removing the watery, particles by evaporation in a vacuum apparatus, thereby avoiding the use of a strong heat. At first, evaporation by boiling water was the plan adopted, but tin's was found to be a mistake, inasmuch as the cream came to the top in a very decided way, and then got churned into butter in the subsequent shaking to which it was exposed. When about four-fifths of the water have been removed, sugar in the proportion of about-35 per cent, is added, and the preparation, which is about the consistency of honey, fs sealed up in small tins.
