Aside from the water, of which eggs contain less than meat, the former is almost pure nutriment, An egg: is really more nutritious than meat. There is really no waste in hone, rind, and tough pieces. A wealthy friend once told me that for his small family it took about 31b of meat per day for each person, but this was because there was so much waste in flesh. Flesh is the most expensive of foods, eggs the cheapest animal food. There is nothing artistic about meat, hut good eggs are clean and look handsome. Alter eating them the plate is not covered with waste pieces, fit only for dogs and cats. 1 think eggs, considering the nutriment they contain, compared with bee', at least four times cheaper. They are more easily cooked. To cook a pound of meat requires considerable fuel and time : to cook a pound of eggs little of either. The way to cook an egg, according to my notion, is to put it into water of a temperature of ISO deg, and let it stand five minutes. The inside or yoke will ho hard and the white of the egg will not be hard, but lioeeulent like curd, and easy of digestion. A little skill will teach anyone how to do this. A fresh egg dropped in water about 180 deg. Fahr.,and allowed to remain for some four or five minutes so as to cook through ami then laid on a nice piece of brown bread which has been toasted and dipped in hot water, is good enough for a king.
