BUTTER AND CHEESE MANUFACTURE. I'lie Government statistical returns i to January 31, 1921, contain some ra- ' ther interesting figures concerning the ; dairying resources of the Dominion j and the number of cow- einploved in I this important branch oi our primarv i industry. In North Auckland there I were 12J,.)53 cows in milk and 18.140 i dry. Auckland district 212,700 and 25.H26. Hawkes Bay il-,567 and 990*, : laranaki 159,621 and 12,881, WellingI ton 138,61'J and 16,175. The Wellington provincial figures include those oi Horowhenua and adjoining counties I which will bear repetition, in Horo- ! wnenua there were 15,994 cows m milk j and 1782 dry, Manawatu 15,5*6 and • ,21, and Hutt 5105 and 1008. The total number of dairy stock hi milk in the North Island was 680,069, and in the | South Island 210.151. This shows the i extent, of the idustry in this -island which, on the basis'of the dairy stock returns, is three times greater thai m the ••south Island. The actual production of cheese am butter at the same period show tht value of the industry, and the amoun in cash that is distributed as a resul oi our dairying operations. In Auckland 212,414 cw; of cheese was manufactured in the Same year, oi a value of £1 242 776in I'aianaki 360,003 cwt. of a value of £2029872. In Hawke's Bay. 53,663 cwt, valued at £287,803 was manufactured. I Wellington made up BS,4llcwt of cheese, of a value of £1,177,387.
