Many dairymen keep their cream sweet; by standing the cans in troughs through which cold water is constantly running. There are other ways. In the first piacc the milk should be run through the separator as soon after milking as possible, and then the cream should be placed in a (tool place. All pails, cans and separator parts which touch the cream should lie strictly clean. Wash returned cans with hot water, then :iir them as long as possible in the sun. A little soda in a lukewarm wash will sweeten the cans before washing. Cover the open cans with a cheese cloth when not in use. This will keep out the dust and flies.
