ONE OF OUR DAIRY GRIEVANCES.
(to the editor.) Sir,—As the flush time for milk will soon be on again, I wish to calPfche attention of those whom it may concern as to the testing arrangement. I consider no man is fit to be a manager of a factory if he has to get the tester to make an average to correspond to his capabilities of making butter, which, I know, is a fact. This loss does not fall on whatever company that is paying for the milk, as they only pay on the test value. Now, I consider the fourteen hours a day worker that toils early and late should be considered, and only a most trustworthy tester should be employed, who, when sending in his reports, should state that such a manager cannot make his test and mine agree, and at once the manager should be removed in fair play to suppliers. I know one party who makes butter on Sundays. He can always get the butter test to agree with butter fat, and, in fact, 10 per cent more butter. _ I think if the companies would examine into each factory that had low testa hey would find it is the ignorance of hose in charge, not the capabilities of the cows. But it is the old old story —get all you can out of the old farmer, though he keeps the whole world; he must keep bad testers and managers; the latter he must protest against.
