HOSPITAL CREAM
Sir.—Air. J. I>. Clark may possibly be an embryo financial wizard and possibly ultimately out vie Air. Montagu Norman, Governor of the flank of England. When lie cheerfully states that. “He" investigated' the farm statement Which Juki been carefully compiled by the secretary and which showed a Dr. balance of £l3 16s .3d, and by a manipulation of figures to suit the occasion convinces himself that the debit balance : should be a credit- balance of £7O Ills Od it is an achievement. What a- wondeiiul man. A sample of Mi-. Clark’s .wizard 1 methods is interesting. .Mark you, the hospital farm was established •to provide a plentiful supply of fresh milk, cream and vegetables. .Milk supplied fiom the hospital farm to the hospital had been credited by the, secretary at Od. per gallon equal to approximately 1/.lo£ per lb. butter fat. Mr. Clark in effect says the farm should be shown as a payable concern, therefore the price of milk should be increased to 1/3 per gallon equal to approximately 3/1-Jd per. Hi. butter fat. Same logic appears to apply to cream. Secretary credited cream at- lid per pint equal to approximately 1/A per M> Imtterfat. Mr. Clark doubles the price which 1 is then 2/6 per lb. butter tat. Vegetables and ether food stuffs produced from the farm are treated similarly ain't so the magician views his work with satisfaction. “Alone 1 did it." Mr. Clark also suggests that it the cream supply were curtailed to the average supply which he assures us other hospitals use and which may or may not be a sufficient supply the cream cheque from theMaetory would he £3O more, hut- he seems to overlook the apparently unimportant tact so far as his calculations are concerned. that the farm account is already being credited with this amon lit, and if his proposed increase in price is achieved it will double. Now, touching Mr. Clark’s cheap quip “That he knows the feed value and the importance to health of milk, cream andl fresh vegetables perhaps better than mysell". May he he does, may he not. If he does, then i suggest that he apply his wisdom as a member of the Board by seeing that a plentiful supply ol fresh milk, cream and vegetables are provided- for hospital use and not advocate a curtailment ef these very essential and nutritive foodstuffs. J. T. .MERRY.
