BUTTER TRIAL.

INTERESTING EXHIBITION

AUSTRALIAN AND DANISH

The Sydney Morning Herald states that steps are being taken to make an interesting trial of local butters from an export standard, together with a comparison with Danish butter.

The movement was initiated by Mr John Russell, manager dairy department New Zealand Loan and Mercantile Agent Co., and the exhibits for the stored export class, which are representative of the whole of the dairying districts oi New South Wales, were delivered to that gentleman during last month. After being numbered and scheduled they were judged by Messrs M. A. OCallaghan, D. Garrad, and T. Mitchell. The butter was then sealed and conveyed to the Farmers and Dairymen's Company's freezing rooms, where it will be held for two months. It will then be rejudged, together with exhibits of fresh butter for local consumption, and the whole will be exhibited during the sitting of the Co-Operative Dairy Factory Managers' and Secretaries' Association's conference in Sydney.

Trophies in the form of silver cups, suitably inscribed, which are being presented by Mr Russell, will be awarded to the exhibits gaining the greatest aggregate number ot points in each class, viz., export and local consumption.

This exhibition, which is the first of its kind, should be of the highest educational value. After the judging is completed a whole day is to be set aside for the managers in conference to go through the exhibits with the judges, and compare the relative merits of each exhibit. This will enable managers to thoroughly discuss the pros and cons in the correct methods of manufacture, and the three judges mentioned will be present to explain any points. Altogether the Venture should be most instructive and very beneficial to the butter industry. Mr M. A. O'Callaghan will have the exhibits chemically analysed, so that each manager can see the exact composition of his butter.

Exhibits of the best Danish, Argentine, and Siberian butters, which are being imported for the benefit of the manager's in conference, by Mr Russell, will also be on view, with the local butters for comparison and educational purposes, and should prove most interesting, especially as these butters will also be analysed.

Sweaney, is also trying to arrange an avenue through which all the latest and most up-to-date dairy factory appliances and accessories can be inspected by managers in conference. This should be beneficial to the managers, as they will be afforded an opportunity of seeing the latest in all the different appliances under the same roof.
