SPINACH SOUP Well wash and drain half a bunch of spinach; place in a saucepan with a little salt, cover closely with a tight-fitting lid, and cook for 10 minutes over a very low gas. Put spinach through a fine mincer or sieve. Grate a small onion finely, add it to two cupfuls of milk, and bring to the boil. Melt one large tablespoonful of butter in saucepan, add one large tablespoonful flour, cook a little; add hot milk and stir until it thickens. Add one bayleaf and simmer for five minutes; remove bayleaf and add spinach, . salt and pepper, and two tablespoonfuls of cream. If too thick add a little white stock or milk. APRICOT ROLLS Soak half a pound of dried apricots overnight, drain well; then add enough hot water to just cover them; cook until soft with enough sugar to sweeten; rub tjirough a sieve. Make a shortcrusi (about half a pound J mixture will do), roll out about one-third of an inch thick, spread with apricot mixture within one inch from edge; roll up like a Sioiss roll, then cut into about two-inch slices. Place slices in a well-greased baking tray, put a little butter on top of each slice, and bake for about 25 minutes in a fairly hot oven Serve hot with lemon sauce.
