TO THE EDITOR Sir, —“Worker” accuses me of being a man of meagre intelligence, but I suggest the boot is on the other foot. I have twice asked “ Worker ” a straightforward question, which he continues to twist to suit his own purpose. May I again ask “Worker” to answer my question—viz.. Will he name one town butcher who does not during the course of a year use either frozen beef, mutton, or pork? As “ Worker’s ” understanding of the English language appears to be a little hazy, I will endeavour to simplify my question for him. The word “us ’ does not mean “to sell over the counter.” The frozen meal may be used in thi manufacture of smallgoods, cured into bacon, or sold in bulk to wholesale buyers. That is actually the luestion. I suppose "Worker” will be saying next that because a butcher sells tripe ready for cooking it is not f rozen. Of course it is not. But that does not prove that the tripe was not frozen before it was cooked by the butcher. vVhy did “Worker’ omit pork from his letter of the 16th inst.? Perhaps he forgot to mention it, or maybe he did not mention it for a purpose, “ Worker ” appears to be worried over the fact that I use frozen meat. It may satisfy him to know that 1 buy frozen beel at 33d per lb, use it with 50 per cent, of fresh meat, manufacture it into sausage meat, and sell at 5d per lb. Ido not really expect a straightforward answer from “ Worker,” although I have great faith in the old saying, “ If at first you don’t succceed. try, try try again." I have, however, no desire or intention to continue this correspondence indefinitely, and unless “Worker” gives plain facts in his reply I will leave it to the public co decide as to how many town butchers there are who do not use frozen meat.—l am. etc., . .
