RISSOLES.

The Southland Daily News has tho following :-- A Waikiwi correspondent (A.T.) writes as follows : —" The unclosed map and advertisement reached mo in a letter from the Old Country, but. without explanations. By looking at both side* of the map, you will see thai, tho ' Rissoles'— whateTer they are—are made in North Otago raid sent to London. It is fust possible that it rniirht suit some of the south country people to look into tho matter, as it is likely before very long there will be a craft trading regularly between tho Bluff and London." In explanation of the foregoing rather enigmatical communication, it may ho stated that the enclosure referred to consisted of a label similar to those pasted on: salmon or lobster tins, having printed in one corner in bold type—" Rissoles, prepared by Lees and Moore, Oanin.ru, New Zealand," and on another— " London Agents, James Morrison and Co., 4, Fenchurch-street, E.C," the interspace' being occupied by a minaturo map of New Zealand, in white and black on a red ground, on which Otago is made to look a little bigger than all tho rest of New Zealand put together, and Oamaru figures as the capital, -with. Tiniaru, Riverton, and Tnvercargill as outlying districts. On the back of thelabel is printed—" Orders for these excellent rissoles executed by Geo, Listed, and Co., 41 .St. Mary Axe, London, KC;." What tho rissoles in question are like is more than we can any, so many kitchen preparations passing under tho title; but probably some kind of sausage cake is indicated. If they are particularly nice, and savory, they would no doubt find ;» local market, and probably this is what ourcorrespondent means when ho speaks of the prospect of direct traders between the Bluff and London. In tho meantime, afl' there are coastal traders running between' this and Oamaru, Messrs. Lees and Moor* might do worse than take the hint, and send a trial shipment. Oamaru flour and potatoes find their way here, and meet with ready sale ; why thou should not "rissoles?"
