VERY TASTY MORSELS
When you have invited friends to spend. the afternoon with you it is often difficult to think of some new and delicate confection suitable for afternoon tea.
HERE are half a dozen very tasty dishes worth trying next time. LEMON BUNS— Take lib. flour, lOoz. yeast, v 1 teaspoon castor sugar, 2oz. each of lard and ordinary sugar, a pinch of salt, 1 egg, % pint of milk, and the grated rind of a lemon. Mix the salt and flour, rub through a sieye, rub m the lard, stir m sugar and mix well. Put the yeast and castor sugar together m a cup and stir till liquid, beat the egg well, warm the milk and pour all three into a well m the flour, and leave m a warm place for 20 minutes. Beat to a dough, cover with a cloth and leave to rise for an hour. Make into buns, place m tins, leave for 20 minutes, and bake for another 20. Brush over with egg and milk and paint with sugar. FRUIT ANGE"L— Cut 2ibs. bananas m slices; peel 4 oranges, pick carefully into small sections, taking out pips; slice some tinned pineapple; lay all on a dish; sift over with sugar; pour over juice of. pineapple, and serve. RUSSIAN BISCUITS — Required: 21bs. flour, l%1»s. sugar, %lb. butter, 2 teaspoons baking powder, a few drops almond flavoring and a little milk. Have mixture very stiff, roll out thin, draw fork over and cut into fingers. Bake to a light brown color. BELGIAN BUN— Take %lb. butter, %lb. flour, Vilb. sugar,,! egg, 1 teaspoon baking Mix flour, baking powder and butter together, then add sugar, egg well-beaten, and sufficient
milk to allow the mixture to roll out like pastry- Brush with egg and milk. Bake -20 minutes. Fill with lemon cheese. GINGER BREAD— Boat to a cream % cup butter, 1 cup sugar; add 2 eggs, well-beaten, and % cup of golden syrup, % cup milk, 2 cups flour, mixed with 2 teaspoons ginger, 1 Teaspoon cinnamon, 2 teaspoons cream of tartar, and Vz teaspoon of soda. Mix all with a little milk. -Bake m fairly quick oven for 30 minutes. RASPBERRY BUNS— loz. ground rice, soz. flour, 2oz. butter, 2oz. sugar, 1 egg and 1 teaspoonfui baking powder. Rub butter into flour and ground rice, add the baking powder and sugar, mix to a light paste with the egg, using a little milk, if necessary. Now roll out, cut into small rounds, put % teaspoonful of jam on each, wet the edges and pinch them together. Place them with the joined side downwards, on a greased tin, sprinkle with coarse sugar, and bake m a quick oven for about 10 minutes. NUTTY- JUNKS— Take 1 cup of dates, 1 cup of chopped walnuts, 3oz. butter, ,1 egg, 1 cup of sugar, 1 large cup of flour, 1 small teaspoon soda and 1 tablespoon of boiiing water. Pour water and soda on dates and let it stand for 1 hour, cream the butter and sugar, add beaten egg, flour, nuts and dates. Put small pieoes on cold tray and cook slowly to be crisp.
