"COOKERY NOOK" recipes are supplied for "N.Z. Truth%exclusively each week by Miss Marion Christian, demonstrator at the Wellington Gas Company. Swan's Down Ingredients — Quarter breakfastcup butter, 1 level breakfastcup sugar, 2 level breakfastcups flour less 2 tablespoons, y^ breakfastcup milk, *4 teaspoon flavoring essence, 2 level teaspoons baking, powder, 2 eggs. Method — Soften butter and cream with sugar. Add eggs well beaten, sif l m flour, add milk and essence. Beat, for 3 minutes. Lastly add baking powder. Line bottom of tin with greased paper and well grease the sides. Put m the mixture and bake for about 1 hour m a very moderate oven, If baked m rather a large tin, 30 minutes will. bo sufficient. Black Currant Jam Ingredients — lib. black currants, l%lbs. sugar, % pint water. Method — Boil black currants and water for 20 minutes. Put m sug'a; and boil from 25 to 30 minutes longer. AJlow to stand for 15 minutes, thei put into clean, dry jars. Cover am. store m a cool,- dry place.
