Sausages m Batter Ingredients — 3 tablespoons flour, 3 /& egg, pinch salt, milk, sausages. Method— Mix the flour and salt; add sufficient egg and milk to make a thick consistency. Beat well. Boil the sausages, skin; and, when cold, dip m the batter and fry- Drain and serve. Swiss Roll , Ingredients— Two eggs, 3ozs. sugar, 2ozs. flour, % teaspoon baking powder, 1 tablespoon milk, jam. Method — Grease tin with lard or melted suet." Dust over the surface with equal quantities of flour and castor sugar mixed. Beat the eggs and sugar till thick. Fold m the flour, baking powder and milk. Bake m a hot oven about six minutes. Turn out and spread with warm jam and roll. If using cream or custard, roll up the roll without anything m, and when cold unroll and spread with the cream or custard.

Add 2ozs. chocolate dissolved m % cupful of milk to make a chocolate roll.
