Lobster Savories TNGREDIENTS;— 'I gill milk, loz. butter, loz. flour, pepper and salt, 1 small tin lobster or 1 small crayfish, y 2 lb. rougrh puff pastry. Method:— Melt the butter m a pan, add the flour and cook for a second or two. Add milk and stir till • boiling. Cook a little. Turn lobster from tin, drain away all moisture, and chop finely, removing the bones. Add to mixture and season to taste. ■ Allow to get cold. Roll out pastry and cut into squares, put a little mixture upon each and old over corner to corner, so getting three-cornered-shaped savories. Brush Avith beaten egg. Bake quickly for. 20 minutes. , Serve" hot,, garnish with parsley. Spice Cake TNGREDIENTS:— Gozs. sugar, I. tea--1 spoon carbonate of soda, lib. flour, %lb. treacle and syrup mixed, Bozs. butter, 2 tablespoons mixed spice, 3 eggs. ' , ' ■ , Method: — Slightly warm syrup and treacle. ■Cream sugar arid 1 butter, add beaten eggs and flour, also carbonate of soda, syrup, treacle and spice. Put into a greased tin, and put m a moderately hot oven, keep m 20 minutes before opening door, then .reduce heat and cook about i%- hours -altogether.
