CREAMED RICE REQUIRED: V/ 2 pints of milk, 21 ** tablespoons rice and iy_ tablespoons sugar. Put m a saucepan and bring to the boil, then simmer gently for one hour. Take off the gas, allow to cool and add the well-beaten yolks of three eggs. Put into a buttered pie-dish. Whip the whites of the eggs to a stiff froth; sweeten and pile on top. Bake m a very slow oven for one hour. # ■jt - # PASSION FRUIT SYRUP TAKE 8 passion fruit, cut and squeeze into a fairly large Jug and add 2 teaspoons of citric acid. Put m a saucepan 2 cups of sugar and one pint of water, and, when boiling, pour over the passion fruit and acid. When cold, strain and bottle. . . SPANISH CREAM INGREDIENTS: One quart of milk, * 2ozs. gelatine, 1 cup sugar, 3 eggs and flavoring essence to taste. Soak the gelatine m some milk for an hour; then add it to the rest of the milk (boiling). Stir over the fire and boil for 1 minute, add the yolks of the eggs, beaten with the sugar, and stir till boiling again; lastly, add the whites, beaten well. Pour Into a mould and when cold turn out. # » • WHEATMEAL CREAM PUFFS TAKE 4 eggs, 3ozs. butter, 1 breakfast * cup hot water, sozs. wheatmeal, salt. 801 l butter, water and salt and stir m the meal. 801 l briskly, stirring all the time until the mixture leaves the sides of the pan. When cold, beat ln eggs, one at a time. Put on cold slide and bake m moderate oven for 20 minuteß. # • • | SPICED GINGERBREAD DEQUIRED: Three eggs, 1 teaoup of "• butter, 3 breakfast cups of flour, 1 breakfast cup of chopped raisins, 1 I breakfast cup of treacle, 1 teacup | sugar, 1 teaspoon each of ginger, cinj namon, nutmeg and allspice; 1 teaI spoon of soda. Cream butter and sugar, warm treacle, dissolve soda m milk, lastly flour and fruit. Bake m a shallow cake-tin m a moderate oven. # # * EGG SAUCE TAKE half a pint of white sauce or ■ melted butter made with water, 2 hard-boiled eggs, 1 teaspoonful of lemon juice and salt to taste. Chop the eggs and mix with the sauce; season," add the lemon juice before serving. Serve with fish. |•* * • CHEESE TOMATOES ■ CELECT some large . tomatoes, cut " them m half, scoop out a little of the inside and fill with grated cheese. Season with cayenne pepper, place m a tin with a little butter and put m a hot oven for five or ten minutes.
