FISH CAKES
MANY people like fish cakes. To *'* make them, mash a quarter of a pound of potatoes till quite smooth. Mix them with half a pound of cooked fish, freed from skin and bones. Pound them well together with a little chopped parsley, half an < ounce of liquid butter, a few drops of lemon juice and a quarter of a teaspoon of anchovy essence. Mix well, and. bind with half a well-: beaten egg,- and form into cakes. Brush over with egg, roll m fine breadcrumbs, and fry m boiling fat.'
