MAKING PANCAKES DEQUIRED: One egg, four ounces of ** flour, half a pint of milk, quarter - teaspoonful salt, one lemon, castor sugar, lard or dripping 1 for frying. Mix flour and salt together, make a well m the middle and break m the egg. Pour about two tablespoons of milk m and stir egg and milk into the flour. Add more milk, gradually stirring it m . smoothly till the flour is ali worked m. Now beat the batter with the wooden spoon for 10 minutes, or till it bubbles. Add the rest of the milk, and let the batter stand for half an hour. Fry m boiling fat till a light golden brown, shaking the pancake now and again t.o make sure it is not sticking. Toss and fry on the other side. Sprinkle with sugar squeeze over a little lemon juice and roll neatly.
