SOUTH AMERICAN BEEF.
A correspondent, writing to the Home News, 31st August, says :—" I dined on August 7 off a piece of North American beef ex Frigorifique. It had been 112 clays on board before it was landed at Kouen, where I obtained it, and afterwards conveyed it in a heated railway carriage into the country. It had thus been kept several days after having been taken out of the preserving chambers of the vessel, yet it was perfectly sweet and as tender and juicy as any piece of beef that I have ever eaten. The success of this notable experiment in meat preserving proves to demonstration that dead meat can be brought to us from any part of the world, even in the summer." A French correspondent writes :—"While the Frigorifique was coming into port at Rouen from the River Plate, the Paraguay was being prepared at Marseilles for her first voyage to the same place. This iron vessel, of 1700 tons burden, and of English origin, received the episcopal benediction in the presence of the municipality and principal authorities of Marseilles, and left on August 17 for Monte Video, which will be reached in thirty or thirty-five days. The vessel belongs to M. Jullien, the owner of a large tannery, and a member of the Chamber of Commerce, and the procedure which he employs for the preservation of the meat is that of M. Carre, who uses ammonia instead of the ether used by M. Pellier, proprietor of the Frigorifique. It is asserted that the ammonia will produce a much more intense cold than the ether, and that the meat will be covered with a thick crust of ice. It is proposed to preserve fish in the same way, and some will be brought back on the first voyage. The Paraguay takes out the carcasses of twenty sheep and two oxen, which were star iped by the Consul of Uruguay at Marseilles, and which will be examined on the arrival of the vessel to see how far the experiment is likely to answer.
