The Isthmus oe Darien.—A practicable route for the Darien Canal has been discovered. There is only one rise of 250 feet, and the remainder of the line across the isthmus will be easily cut. Meat Preserving.—A new process ot preserving meat has just been perfected by Mr Richard Jones. It has long been inown that meat preserve a in tins by the ordinary-pro-cess of heating in a chlo 'lde of calcium bath for a prolonged period, and then closing the orifice, is surrounded by jelly, which, with most of its juice, has been extracted from the meat, leaving a tasteless and exhausted fibre. To obviate this objection, Mr Jones exhausts the steam by a tube connected with a vacuum chamber, the nxsit thus being cooked with its juices left in their natural place amongst the muscular substance, while the whole process can be effected at a lower temperature than has been heretofore used, and with less injury to the flavor and appearance of the meat.
