Preserving Bttiter.—A correspondent of the " Lyttelton Times," replying to a desiie expressed to discover some sure and effectual mode for preserving butter, whereby it may be fitted for a distant market, sends the following, which he says is a ' perfect cure':— Take a quarter of a pound of loaf sugar, and one pound of salt. Pound well together, and use at the rate of one ounce to the pound of butter when potting down. Butter so treated, says the correspondent, will keep sweet and fresh for twelve montha.
