To THE EOITOK OF THE «' EvBKINQ MaII." Sir — Seeing in your valuable paper the new Licensing Act treating on colonial wine, I think it is an industry capable of being turned to profitable account. Being myself an extensive grower of fruit I have made vaticua experiments with the following results :— Wine can be made with 3lbs of sugar to the gallon containing 50 degrees of fruit ; wine can be made with 21bs of sugar to the gallon, a strong and pleasant flavour of the rjpa froit ; wine can be made With lib of sugar into champagne cider of a first class quality; wine can be made without sugar, placing before the public one of the beat wines for people troubled with indigestion. I 6incerely solicit some one to unite with me in bringing such an important industry b«fore the public. I am, &c, WttLUM Scott, Builder, Riwaka.
