THIS mode of Cooking has been proved by long experience to be advantageous in many ways, and the recent reduction in the price of Gas has farther increased its economy. Not ouly may the cost of Gas consumed be kept by careful management under the coat of coal for a similar amount of work, but a saving is effected in the value of meat cooked by Gas — the nutritious juices being more readily retained in the meat owing to the easy control over the amount of heat used.
