DAIRYING.
(From the Rural New Yorker.) The town of Caroline is situated in the south-eastern corner of Tompkius County, and is very well adapted to dairying. The land is rolling, with ranges of high hills, some of which approach the dignity of mountains. The country is well watered, and the valleys appear to be fertile and productive. In this town, within a short distance of Slaterville, and about ten miles from Ithaca, is located the Tompkins County Butter and Cheese Factory. It has been in operation four years, and is the oldest butter factory in the county. The factory receives the milk from three hundred and seventy-five cows, and patrons pay five cents per pound for the manufacture of butter, and two and a-half cents per pound for the cheese, including furnishing material, such as annato, boxes, packages, &c, which, with other expenses of the factory, are provided for and borne by the manager thereof.
