LIGHT BREAD.
To the Editor of the Nelson Evening Mail,
Sir, — As a member of the Scientific Association I am desirous of bringing before the notice your readers the remarkable effects of an ingredient at present much used by at least one of the Nelson bakers. I refer to a peculiar description of yeast which produces bread of so light a character that two loaves of it which were left at my house during the current week, each of which was supposed to weigh 21bs, were, one of them four ounces, and the other two ounces short of that amount. The enterprising individual who does me the favor to supply me with this light and wholesome food is, I consider, deserving of every eucouragemeut, aud I therefore pledge my word that if he continues to manufacture it in precisely the same manner for one week more, I will at my own expense publish his name, and address iv your paper, by way of advertising his fame, so that the public at large may have an opportunity of sharing with me in the benefits resulting from his scientific discovery.
