CHEESE AND HONEY.
Cheese Puffs. —Put half a cup of water and a heaped tablespoonful of butter into a saucepan, and as it boils thicken with one tablespoonful of maizona and two of flour w.et with milk. Stir' well and cook five minutes. Remove from the fire and stir in half a cupful of grated cheese, flavored with pepper, salt and cayenne, and when cool beat in two eggs, one at a time. Drop on buttered paper, in lumps faaapart, and bake in a moderate oven till golden brown. Serve hot or cold. Cheese Salad. —Break a lettuce and lay it nicely on a dish. In the hollow of each leaf put a spoonful of broken (not grated) cheese, and a dressing of tarragon, vinegar and oil in equal parts, and a dusting of pepper and salt. * Honey Ginger Snaps (American). — Take a'pint of honey, fib. butter, one dessert-spoonful ground ginger, and boil all together, watching that it does not boil over. Set aside till cool, then stir in a spoonful of salt, and flour to make a dough. Roll out very thin, and cook in a qxiick oven. Honey Cookies.—Beat three tablespoonfuls of baking soda into two cups of warm honey, and a cup of salted dripping (or butter), and two teaspoonfu'ls ground ginger. Beat well,, then put in a cupful of hot water, mix, and take flour 'Sufficient to make a dough to roll. Roll out and cut. Bake in a fair oven. —From Mary Gilmore's Sydney "Worker" page.
