Lemon Biscuits Ingredients: 4oz. of butter, 4oz. of castor sugar, Boz. flour, grated rind I lemon, 1 egg, Scant h teaspoonful of baking powder, pinch of salt. Method: Cream butter and sugar, add lemon rind, drop in egg, and beat well. Add gradually sifted flour, baking powder and salt. Mix well, turn on to ljghtly floured board, knead slightly, cut into pieces, roll out, cut into rounds with fancy cutter, bake in a moderate oven till crisp and pale golden brown, about 15 minutes. Steamed Lemon Pudding Ingredients: 3oz. of butter, 4oz. of castor sugar, 6oz. flour, 1 small teaspoonful of baking powder, grated rind of 1 lemon, 2 eggs, i gill milk. Method: Beat butter and sugar to ;i cream, add eggs well beaten, then milk, and lastly flour, baking powder, and lemon rind. Mix' lightly, pour into a well-greased mould, and steam for 11 hours. Serve with lemon sauce. Lemon Pudding (Baked) Ingredients: 3 cupfuls of boiling water, grated rind of 1 and juice of 2 lemons, yolks of 3 eggs, 3 dessertspoonfuls of arrowroot, pinch of salt, 11 tablespoonfuls of butter. (Egg whites, 6oz. castor sugar ; juice of 1 lemon, for meringue). Method: Blend arrowroot with a little of the water, place the remainder on to boil. When boiling, stir in blended arrowroot, add lemon juice, sugar, butter and salt, and boil for 5 minutes stirring constantly. Remove from fire, allow to cooj. slightly. Add lemon rind and well beaten yolks gradually, being careful the mixture is not too hot, otherwise it will curdle. Add pinch of salt tc whites and beat stiffly, add sugar gradually until stiff meringue, add lemon juice a little at a time, beating well. Pour pudding mixture into a greased piedish, spread meringue over. Place in a moderate oven until meringue is set, and a golden brown.
