The Christmas Turkey

The time needed for cooking a turkey depends on jts weight. If it is a young bird, 12 minutes for each pound, and 12 minutes over is an average time. If a mature bird, allow more time. Stuff tho breast w.ith veal or sausage forcemeat and .cover it with greased paper or iat bacon. Put in a baking dish with plenty of dripping, place in a hot oven at first and gradually reduce the heat. Baste frequently and just before it is ready dredge with flour and pour over it some liquid butter to froth and biown it. Garnish with forcemeat balls or fried sausages and servo with it a bread sauce or celery sauce.
