To-day’s Recipe

APPLE TAPIOCA Quarter cup tapioca, J cup sugar (more if apples are very tart), J teaspoon salt, i teaspoon nutmeg, 2 cups boiling water, 6 tart apples. Soak tapioca in i cup cold water for 20 minutes. Place in top of doublo boiier, then add sugar and boiling water. Next add salt and nutmeg, and a very small amount of grated orange or lemon peel, and cook till transparent —about £ of an hour. (Stir occasionally during the cooking.) Wash, peel and remove cores of apples. Cut into eighths lengthwise. Place apples in buttered baking dish. Sprinkle top of tapioca with £ cup fresh bread crumbs which have been mixed with J cup melted butter. Bake one hour in moderate oven (350 deg.). Serve hot with cream. Serves six.
