GREEN TOMATO JAM Ingredients: 41b. green tomatoes, 2 lemons, lor bruised ginger, 41b. sugar. Cut the tomatoes in halves and put into a preserving pan; add the rinds of the lemons and the ginger tied in a piece of muslin. Gently simmer until the tomatoes are tender, then add the sugar and bring to the boil. Stir «nd boil quickly for half an hour or until a littlo will set on a cold plate, remove the ginger, then pot and tie down.
