Arnold, says : It will greatly add to the purity of flavor in the cheese and hence w£ll enhance the value of the great mass of cheese made in this oonntry. E. G. Jejjktns, of Marksbury Vale, near Bristol, England, son-in-law, of and successor to, the Jate Joseph Habding, the celebrated Chedder Cheese Maker, says : "We think the Eennet Extract a first rate article and a boon to all cheese-makers. We may yet add that Dr Scitatz MANN, President of the Swiss Experimental Dairy Station, in a recent treatise on " The Preparation and use of Hennefc for Cheosemaking," remarks : In the direction of cliee«emaking, the most important step in advance is the production of a pure extract of calf rennet that can always be depended upon, and is not liable to spoil by 'taping. It has been brought into the market by Chr. Hansen, of Copenhagen and its value is best proved by its rapidly increasing consumption. FROM AUSTRALIA. "We qnote from a letter received from the experienced Dairyman, Mr Harding, New South Wales ; "Wo have made about 450 tons of cheese at JJodalla., without one failure, ard wherever it is used once, it (Chr. Hansen's rennet and coloring) becomes a favorite. NE^W ZEALAND. " Palmerston Noi th, 23rd October 1880,— To John Monkad, Esq.— Dear Sir, — I have great pleasure in bearing testimony to the great value of Hausen's Cbeese Eennet Extract. I have used it entirely during the past two seasons, aud so long as I can get your Extract, I shall use no other. I have found it to be the one thing needful in the successful manufacture of. cheese, as I can always rely upon it as being uniform in strength. — Yours truly, John M'Keown." From the renowned cheesemaker.C. B. Candy, who took first prize at Canterfmrv Agricultural Show, we have received the following : — " Halswell. Canterbury, 29th October, 1880—1 have great pleasure in testifying that I have used Chr Hansen'a Eennet Extract and Cheeso Coloring during the last twelve months, and have found them to give entire satisfaction. I consider the introduction of these preparations a boon to cheeseinakers, and can with confidence recommend them. — Chabi<es B. Candy."
