APPLE AND FUAISIN SOUFFLI:

To each one pound of apples use one handful of seedless raisins that have been previously soaked in hot water. L’eel apples and cut into quarters. Put in buttered fireproof dish with the raisins. Place in moderate oven and bake for 20 minutes, at end of which time the fruit should be threequarter cooked. Over this pour 1 cup of cream, well sweetened and lieaten with three eggs. Finish cooking till set.
