HONEY SPONGE

Take Boz. flour, 2oz. sugar, 2oz. suet, 4oz. honey, 4 level teaspoonful bicarbonate of soda, 4 teaspoonful ground ginger, milk. Put the flour in a basin, add the grated suet and mix well. A pinch of 6alt always improves the general flour. Stir in the sugar and ginger. Press the bicarbonate of soda through the fingers to smooth out any lumps; and add it to the mixture. Heat the honey slightly and add it. Stir in enough milk to make a fairly stiff consistency. Turn this into a well-greased basin. Cover with a piece of greased paper. Steam steadily for two hours. Serve with a little melted honey, to which has been added a pincli of ginger and a small grating of lemon rind.
