The outer covering ot calico, branded with the nnrae of the factory, was neatly put on giving a clean outside appearance to the package. On dividing the cheese across the centre, we found it of excellent quality and agreeable flavour. It reminded us of somo of the best samples ot those Old Port Cooper cheeses which had such a good reputation m the early days of the Canterbury settlement. Pro/nits richness we ju>lge that when ripened with age, it would equal, if not suipnss, some of the best specimens of English oheeae.
