The Greatford Bacon Factory.
[Chronicle.] This factory is now an accomplished fact, and Mr Keteim-yer, the proprietor is to be congratulated upou his enterprise. Bacon curing is an industry which should receive much more attention from our settlers than it does, fot the financial results are, when the business is properly conducted, rery considerable. Much more importance should be paid to those who feed pig- for bacon making to the improvement of the breed. It is far .tetter for a man to buy an animal, fcay for £2, and to pay £1 for feed, than ,to buy an inferior bred one, and have to pay £2 for feed. Settlers must remember that on the good breed of the pigs depends to a great extent the quality of the bacon. The following paticulars respecting Mr BoteineyerV factory will be found interesting : - The main building is 82ft x 30fr, and 12k iv height, and is m two storey*. The pat t of the ground floor occupied by the engine, steaming vats, and tanks is about 20 feet. The floor abovrt, about 60ft long, is used foi storage, and contains the shaft from which the grist mill, sausage machine, Ac, aie driven. A portion of the lower flat is divided iuto pens 10ft square, with sloping floor from centre outwards for drainage. ••These* pens contain at present 75, .pig** m the last stage of preparation before killing. . These are fed fr«»m a trolly running the whole length of the building, with a turntable at one end by which the. trolly c:»n ; be utilised for feeding pome Vso.pigs m another shed, which is 15.0 ft long by 17ft wide. After killing, the, carcases- are taken to the curing shed, whi«*h stands about a chain and a half distant, and is 42ft x 20ft. This she! is divided into two |>ortion», one, 30ft long, being taken up with Baiting vats 6ft x 3ft and 2ft deep. These rats are fitted with tight lids. In this nhed tho pigs are cut up nhd hung till salted. Another division is u-ed" as a drying room, 15ft x 12ft. Here a fireplace is huitt, whose chimney communicates with the smoking room above, and conveys the necessary smoke. In this building is Mr Itete ipeyer's office. A special depaitment is devoted to the packing and storing of Iwcon, It will be *eon by this account that Mr Ketenwyer nu««fc have devoted a great deal of capital t*K the establishing- of hi* new enterprise, and we trust he will l»e well renumar-uted-by a large and profitable business.
