We quote the following from the Tapanui Courier : The following communication received by the Farmer's Club, has been placet} at qh.r' diapoßftl, and we have no doubt the matters referred to therein will be considered by those particularly interested : — We consider it is a part of our duty to send m a report m writing on the dairy produce submitted for our inspection as judges at your show, as we consider these shows are not merely got up to awaid prizes but chiefly that they should be a medium of instructing the producer how best to improve m the art of making butter and cheese, and we trust that anything said herein may be pondered on, not only by the exhibitors at your show, but by thope of every district through the colony ,as the time has conaej when we have to look for markets outride qurbpuqda^ies. for a large, portion of what is made', and thai "'has to be placed m competition with that of other lands where they have availed themselves of the best skill and, appliances
with, the aid of science m the art of making it. What we saw was very good — that. is, tile fresh and powdered butter, and more m quantity than we expected ; but the salt butter aud cheese were uothing like what they ought to be, although not worse on the whole than is made m other districts. However, on seeing it the conviction is more than ever forced upon us that it will never do for them to wait and learn better, but to avail themselves at once of the experience of other districts and countries by combining and running oil their milk -to f agtofy-o^f^rtowwrirhefp-thygid of skill, science,, and the best appliances will be called id to.niake?it what it haa every right to be, viz., the best m too world, as thesis no settled place on the earth's surface ithat has the advantages to do so thatfliis Cofony possesses—espocially this portion of it.
