FROZEN MEAT.

As the low price of frozen mutton, m the English markets is cheating- a good deal of interest m the -colonies' at the present time, the following from the Bristol Mercury and Daily Post, ' Will afford some information on the 1 .subject. A correspondent wri.ing to that; paper says : — " In spite of the reported low prices received by ;Colonists> the meat (Australian and New Zealand), continues to realise a good price" m England. I have this morning, .received n; leg and neck of "riuiitoni x British. Queen, for which I am chaj'ged B^4'; per 11>. Jn tho price list sent with the! invoice, legs are charged 10d f ;< shoul-' deis, 8-^d ; necks, 7d. A whole sheep is, 7;|d per lb. So that if several families would unite, they might obtain meat at a reasonable 'though not a cheap, rate. This price d.oes. not include carriage, which' adds Id per lb on small quantities, but only %d on a whole sheep. The meat is excellontj with more flavour than the common run- of Englisji,. mytton' now soldi" The Mercury, commenting on ihe above letter, points out that it is clear tjjat there is, "as "ar as coosh criers are concerned, a market here for trans-ocean ic meat at prices which, under a properly adjusted system of distribution, would not only prove a groat boon to families, but would yield a fair return to the sheep breeders and graziers, in -the colonies." It is also, pointed out?" that"*' if the colonists >vish the industry to succeed they must adopt some machinery by mains of which the dwellers 'at. every centre where population is considerable will., be enabled to know where they can, within easy' reach of their dwellings, feuy m retail quantities Australian or New Zealand* mutton. What the colonists require, and if they are really m earnest m their desire to establish a consulting trade,; t-liey will have to arrange for, is shops to which the consumers may repair for the purpose of buying just as they now; do: of the Home butcher."
