You have only to ininie'fve the meat' in a bath of water slightly acidulated with nitro-muiiatic acid. After thorough; imiuersion the meat will, it is claimed, remain quite good for many months,- When requred for consumption the carcases thus treated must be dried at a temperature of 60deg Pahr. The only sign lefti of the chemical treatment is a slight brown tint | but this can be whblly'renioved if, prior to the drying process, the meat be slightly soaked m .plain water.
