WHITE v. BROWN BREAD

MEDICAL RESEARCH REPORT. London, June 11. The -old 'controversy of white versus 'brown bread is likely to be revived by a report issued by the Medical Research Council containing •the investigations of Prs. R. A. M'lC'anieo and R. D. Laurence, of King’s College Hospital, who say that undoubtedly white flour is a better source of energy, for it contains a higher percentage of starch than brown. In the latter some of the starch is replaced by cell membranes of a very indigestible type of proteins derived from bran, which do not rank in nutritional value .with animal or other vegetable proteins. The laxative value of wholemeal bread is not greater -than any other laxative.
