When mixing flour to thicken gravies add a-half teaspo_onful of salt. The flour will then be much less apt to lump.

Bacon is more delicate in flavour and also more wholesome when baked than fried. Put the rashers on a rack in a baking pan and place in a quick oven. A-quarter of a teaspoonful of baking powder added to mashed potatoes while beating will make them light and fluffy. Should you find that you cannot use a lettuce when yon buy it, stand the root in a basin or jar of cold water and it will keep fresh and crisp for several days. Broccoli, cauliflowers, and savoys can be treated with the same results.'

When more pastry has been made than required at one baking, wrap it in oiled paper and it will keep sweet and good for quite a long time.

An egg that is cracked can be boiled without any trouble if you enclose it in a piece of soft paper and simply curl up each end into a wisp, for, when the paper becomes wet, it adheres to the egg and prevents it from coming through. Tin gem pans, pastry tins, cake tins, and bread tins are kept in splendid condition with smooth surfaces and free from rust and dark spots, if, instead of washing them after use, they are cleaned with soft greased paper. A spatula will quickly remove any bit that cannot be thus wiped off.
